Open Question: Is this safe for a diabetic?

Im going to America with my sister and granny, my granny is a diabetic and just a couple of days ago she had a 'diabetic stroke' or something like that, it was caused by her not getting enough sugar or something... Im worried about her because the whole journey to get to North Carolina is altogether 20 hrs, (we have to go from Belfast International - Dublin - Amsterdam - New York - North Carolina). Is all this travelling safe? She is used to travelling, she has been all around the world! Im just scared that the same thing might happen again...
